Pretty in Pink

I know I’ve given you my famous chocolate chip meringue recipe (click here) before but here’s a quick one for pink vanilla meringues, perfect for a little girl party!

4 room temp egg whites
1/4 tsp good vanilla
1/4 tsp salt
1/4 tsp cream of tartar
few drops pink food coloring
1 cup sugar

Preheat oven to 225 f. Whip the egg whites,salt,vanilla, and cream of tartar until frothy. Add the pink food coloring until you get your desired shade but remember it will get lighter as the mixture grows. Gradually add sugar with mixer on high and best until stiff peaks appear and you can hold the bowl upside down without it moving (but be careful!) With a spatula fold the mixture a few more times to incorporate coloring then put into a ziploc or piping bag fitted with your favorite piping tip. Pipe onto parchment lined baking sheets (here’s a secret tip; dab a little meringue in each corner of the baking sheet to help the parchment paper stay put! You can thank me later.) Bake for an hour and five minutes then transfer to a cooling rack. Once cooled store in an airtight (air and humidity are enemies of the delicate meringue!) container and enjoy!
